Makes 6 servings.
1/2 c. butter
6 cloves garlic, minced
1/4 c. dry white wine
1 T. lemon juice
24 large shrimp, peeled and deveined
24 mushrooms, stems removed
1/2 c. shredded Mozzarella cheese
1/2 crumbled Feta cheese, drained well
Preheat oven to 325F.
Heat butter and garlic in a skillet over medium heat until butter begins to bubble; add wine and lemon juice.
Stir in shrimp, and cook until they just turn pink, about 3 minutes.
Place one shrimp into each mushroom cap, and place into a small baking dish.
In a small bowl, stir together mozzarella and Feta cheeses.
Spoon garlic butter into mushroom caps, and sprinkle each with a pinch of mozzarella cheese.
Bake at 325F for 10 to 15 minutes until mushrooms are tender and cheese is golden and bubbly.
