Makes 4 servings.

4 tsp. butter, softened
8 slices country-style rustic bread
8 thin slices cooked ham
10 oz. Brie cheese, cut in 12 slices
pinch black pepper

Spread butter evenly and thinly over 1 side of each slice of bread; lay 4 slices, butter side down, on work surface.
Top each with 2 slices of ham; divide cheese slices evenly over ham and sprinkle with pepper.
Cover with remaining bread, butter side up.
Grill in skillet over medium heat, pressing down with spatula or weight and flipping once, or in pancake griddle or panini press, until bread is crisp and browned and cheese is melted.
