Makes 6 servings.

6 c. peeled, cored and thinly sliced apples
8 T. butter
1/2 c. sugar
2 T. water
2 c. crushed digestive biscuit crumbs
1/2 c. red currant jelly
whipped cream

Place apples in saucepan with 2 tablespoons of the butter, sugar and water.
Cover pan and cook gently until apples are soft.
Remove lid and cook over high heat to reduce any liquid in pan.
Remove apples from pan and cool to room temperature.
Melt remaining 6 tablespoons butter and stir in biscuit crumbs.
Heat red currant jelly in small saucepan, just until melted.
Place one-third of the apples into bottom of an 8-inch serving dish.
Drizzle one-third of the red currant jelly and sprinkle with one-third of the biscuit crumbs.
Repeat with remaining apples, jelly and crumbs. Pipe or spread whipped cream over top. Chill in refrigerator.
