Makes 6 to 8 servings.

3 tablespoons butter
1 red onion, chopped
2 c. fresh sliced mushrooms
1/2 c. chopped dates
1 8-oz. wheel Brie cheese

Melt butter in a skillet; add onion.
Stir over medium heat until tender and caramelized.
Add mushrooms; cook until tender.
Add dates and warm mixture for about 2 minutes.
Slice Brie in half horizontally so that there is a top and a bottom.
Fill with the onion mixture. Replace the top of the Brie.
Microwave for 1 to 2 minutes or until warmed through.
Serve with toasted French bread or crackers of choice.
