Easy Shortbread

- 1 cup butter, softened
- 1/2 cup sugar
- 2 1/2 cups sifted flour
Place the butter and sugar in a mixing bowl. With a mixer on medium speed, cream the ingredients together until light and fluffy. With the mixer running on low, add the flour 1/2 cup at a time. Mix until well combined. Place the dough in the refrigerator and chill for 1-2 hours. Preheat oven to 300 degrees F. Remove the dough from the refrigerator and divide into two equal balls. Pat each dough ball into a circle approximately 7-inches in diameter. Place the circles on a baking sheet and lightly score them with a knife to mark wedges (6-16 depending on how big you want the pieces). Place the baking sheet in the oven and bake at 300 degrees F for 30 minutes or until lightly browned. Do not let get too brown. Remove from oven and let cool for 1-2 minutes then place on a cooling rack.
