- 2 cups chopped onion
- 1/2 cup olive oil
- 2 pounds green beans, fresh or frozen
- 2 tablespoons minced or pressed garlic
- 2 cans (14 ounce size) diced tomatoes
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon dried basil
- 6 cloves garlic, crushed lightly
One-pan cooking: Saute onions in olive oil over medium-high heat until light brown. If using fresh beans, rinse, shake dry and snip off stem ends and cut into bite-size pieces. Add beans to onions in pan and stir. Add crushed garlic and saute over medium heat for 4 minutes. Add tomatoes and seasonings; stir, then simmer 10 minutes. Add whole garlic and cook 10 to 15 minutes or until garlic and beans are tender.
