2 lbs ground beef (Lean)
7-8 Potatoes
2 Eggs
3 tbls Butter
1 Lg onion (chopped)
1 cup Mushrooms
1 can sweet corn
1 can creamed corn
salt & pepper to taste
1 cup of shredded chedder cheese

Makes 8 servings

Directions
Peel, cut,and boil potatoes.
drain, add eggs and mash, season
to taste, and set aside.
In a lg skillet brown the ground
beef. drain out any excess fat.
add chopped onion, mushrooms and
butter. salt & pepper to taste.
cook till Mushrooms are cooked.
In a large glass baking pan
add meat mixture on the bottom.
add whole corn, then creamed
corn over that. Then cover with
Mashed taters,, Bake covered at
350 for 1 hour, uncover and top
with cheese and put back in oven
for 5-10 minutes or until cheese
melts. I usually make a small
pan of Country Gravy or Mushroom
Gravy on the side. My kids love
it with ketchup.
The 2 Eggs make the Mashed taters
really creamy. You can use Butter
and cream if you like instead of
the Eggs.
