1lb. trimmed boneless sirloin (cut into strips)
1T. minced garlic
1T. soy sauce
1/2t. ground cumin
3c. frozen french fries
2t. oil
1 lg. red onion (cut into strips)
3 jalapenos (seeds removed & cut into strips)
3 lg. plum tomatoes (cut into strips)
1/4t. salt & pepper
1/2. chopped cilantro
white rice
Combine garlic, soy sauce & cumin, add beef strips. Refrigerate for 2-8 hours. Cook french fries according to package directions. Heat 1t. oil in a medium size pan over medium-high heat, cook beef strips to your satisfaction. Set aside cooked beef. Heat 1t. oil in a large pan over medium-high heat, add peppers & onions, cook until almost tender, add tomatoes & cilantro to heat through. Combine beef strips into pan with vegetables, heat through. Toss in french fries, salt and pepper. Serve over white rice.
