Beef Barley Casserole

Ready in: 1-2 hrs
- 1/3 cup barley, soaked in water
- 1 pound ground beef, browned
- salt and pepper
- 1 medium onion, cut up
- 1 cup sliced carrots
- 2 tablespoons molasses
- 2 tablespoons soy sauce
In a 2-quart casserole, mix drained barley, browned beef and onion, carrots and molasses, mix well. Add enough water to cover. Bake at 350 degrees F for 1 hour covered. Before serving, add the soy sauce. Mix. You may have to add more water during baking.
