Basic Chicken Marinade

- 1/2 cup orange juice
- 1/4 cup lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1/4 cup canola oil
- 3 cloves garlic, pressed or chopped
- 1/4 cup chopped fresh parsley
- 1 teaspoon dried oregano
- kosher salt, to taste
- black peppercorns, freshly ground
Combine the orange juice, lemon juice, Dijon, and Worcestershire sauce in a non-reactive bowl. Whisk well and while whisking, add the oil slowly. Stir in the garlic, parsley, oregano. Add salt and pepper as desired. For easiest marinating, pour the mixture into a zip-top plastic bag. Add chicken pieces, seal the bag, and turn to coat the chicken in the marinade. Place the bag in the refrigerator. Marinate chicken breasts for 3-4 hours, or chicken thighs, drumsticks, leg quarters, or wings for 4-6 hours. You can marinate a whole chicken for 6 hours. Discard the marinade after using.
