4 cups peeled and sliced yellow squash or zuccinni.
1 sm can of tomatoe sauce or tomatoe paste
2 T oil
3-4 chicken breasts or any type of chicken parts. (i use 1 whole cut up chicken)
2 T garlic powder
3 T ground cumin
2 t pepper
2 t salt
6-8 cups water
1 small can of corn or 2-3 ears of corn, slice corn off cob
in dutch oven pan heat oil and put in chicken to precook or just to brown.
add seasonings, stir
add squash or zuc and corn
add tomato sauce, stir
add water, enough to over all
cook on medium heat, bring to boil and let some juice evaporate about 30-40 minutes
serve and eat with warmed up corn tortillas
makes about 4-6 servings
